My Secret Obsession

Ok, it’s no real secret. I love chocolate! Who doesn’t though, right? Sometimes, a girl just needs a sugar fix. Makes me feel naughty. Wink. Since going vegan though, it’s hard to find a quick fix chocolate bar treat that I can actually eat! Everything has either too much sugar or some sort of dairy in it. Which just doesn’t fly with me. Also, I have been craving mint chocolate these days, which just makes it harder to find something I can eat and that’s tasty.

Well my lovely bloggy blog readers, I found it! The Holy Grail of mint chocolate bars. O-M-Goodness, did I ever find it.

Theobroma. Best chocolate bar I’ve evah had. Their 60% dark mint leaves is beyond amazing and not only is it vegan (I thought only 70% and higher had no dairy, but I was wrong!) but it’s also natural, organic, gluten free and GMO free! And, it tastes like heaven. It’s not too dark, so it’s not bitter and it’s not just mint flavoring. There are actual for reals mint leaves right in the bar, so it adds a really unique texture as well. DE968-l

Only down side to this, is that I’ve only found it at my local organic store and it’s more money than your average bar. But it’s so rich, you don’t need alot of it so it lasts a while. May I also suggest using it for a sexy fruit fondu! Yummy. I’m also going to work this chocolate into some delish recipes for the future, so watch for those!

Theobroma’s delightful dark chocolate will astound you with its full force of flavor. Combined with the natural flavor of real mint leaves, this leaves other mint chocolates in the dust. Seriously, it’s amazing. I think it’s the texture that puts it over the top. Nothing beats something that’s pure and natural. The ingredients are simple and easy to pronounce too 😉 Organic Fair Trade Cocoa Mass, Organic Fair Trade Cane Sugar, Organic Fair Trade Cocoa Butter, and Mint. That’s it. Oh! And did I mention that the entire bar is only 400 calories?! Which is by far the least amount of calories I’ve seen in a chocolate bar this good.

Me-Oh-My Vegan Coconut Fudge

Fudge. Need I say more?

Fudge is such an indulgent treat and just so happens to be one of my favorites. Granted, it’s not the most healthy treat in the world, but sometimes you just need to live a little 😉

I’ve been to Banff, Alberta many times. When you live in Alberta, you tend to go there for a weekend mountain getaway. It’s a beautiful, majestic little town full of fun and unique places. One of the best places to get fudge, just so happens to be in Banff at a little place called “The Fudgery”. It has all kinds of fudge. Every flavor you can think of. I’m a simple girl, with simple tastes. I always got the plain old chocolate. And me-oh-my, it was worth every bite.

Now being vegan, I sadly can’t have that fudge anymore. But, I have a killer recipe that is sure to please any of you fellow vegans and fudge enthusiasts.

Please note that this recipe can be adjusted! This is the coconut recipe. If you wanted, say, a more minty taste you just need to omit the coconut and add peppermint extract and crushed candy canes. So after you try this flavor, give some others a-go and post in the comments what fudge is your favorite and I can help you adjust accordingly 🙂



Me-Oh-My Vegan Coconut Fudge coconutfudge

  • 1 Cup Dairy-Free, Semi-Sweet Chocolate Chips
  • 3-1/2 Cups Confectioner’s Sugar
  • 1/2 Cup Dutch Process Cocoa Powder
  • 2 Tablespoons Dairy-Free Butter
  • 1/2 Cup Regular Canned Coconut Milk
  • 1/2 Teaspoon Vanilla Extract
  • 1 Cup Unsweetened Flaked Coconut, Toasted

Lightly grease an 8 x 8 inch square baking pan.

In a large bowl, combine the chocolate chips, sugar, and cocoa. Separately, place the margarine and coconut milk in a small saucepan, and stir together over medium heat. Cook the mixture until the margarine has melted. Remove it from the stove, and immediately pour over the chocolate mixture. Let everything sit for a couple of minutes, and then stir vigorously to melt the chocolate and add the dry ingredients. Continue stirring until a completely smooth mixture forms. Mix in the vanilla, and quickly pour everything into your prepared pan. Smooth out the top and sprinkle the flaked coconut evenly over the entire surface. Press the coconut gently into the fudge with the palm of your hand. Let cool completely before cutting into squares.

Makes 32 Small Squares


Shamrock Protein Shake

In honor of St.Paddy’s Day, (happy that day, by the way) I wanted to share a wonderful little protein shamrock shake recipe! I love this recipe because it’s minty, yummy and green! And it’s healthy, but shhh. Nobody needs to know that 😉



Shamrock Protein Shake green-smoothie1


  • 1 cup unsweetened almond or soy milk
  • 1 scoop vanilla or chocolate Vega protein powder
  • 2 cups spinach
  • 1 banana
  • 3 drops mint extract
  • stevia to taste (optional)
  • ½ cup ice

Mix it up. Drink it up. Enjoy!
