My “gasp” face. Or something.

I started my blogs “The feistiest of them all” & this one, Beautifully Vegan this year as just a little place to go to to collect my thoughts and share my recipes, ideas, jokes, and photos with whoever wanted to see. I never thought that I’d get so many lovely followers, comments and compliments on both blogs. Combined, I have almost 250 followers so far and countless comments and compliments. So for that, I wanna say thank you 🙂

I really am just a simple, yoga loving, smoothie drinking, vegan health nut kinda girl (who also happens to have a charming yet sarcastic wit. Wink.) and it’s nice to know that there are others out there, strangers even, that appreciate who I am and what I have to say.

I have a wonderful family, great friends and probably the greatest love anyone could ever ask for and I’m happy to share all of that, among other things, with you all.

Raw Coconut Macaroons

I’ve been reading Kimberly Snyder’s book “Beauty Detox Foods” and absolutely adore it. One of my fave sweet treat flavors, is coconut. And these lovelies are raw, vegan & gluten free. Win-Win-Win.

Ingredients:

  • 2 cups coconut flakes
  • 1/2 cup raw cacao powder
  • 1/2 tsp vanilla extract
  • 1 tsp raw coconut sugar (used instead of stevia)
  • 1/2 cup raw coconut nectar
  • pinch of sea salt

 

Directions:

  1. In a large bowl, mix together the coconut flakes, cacao powder, coconut sugar, sea salt, and vanilla extract.  Add the coconut nectar last and mix well until everything is well-combined.
  2. Scoop a small amount into hands and roll into shape.  This step is a bit messy as the coconut nectar is quite sticky, but that’s part of the fun of cooking!
  3. Place macaroons into the freezer for a few hours.  Sprinkle with some extra coconut flakes and serve cold.

I’ve been on a bit of a hot yoga kick the last little while. I bought a two week pass to a studio near my place, that I hadn’t tried before. I’ve gone every morning for the last 9 days. One of those days was at a different studio, a Bikram one, but I much prefer the new one I found. Bikram is great if you’re looking for a challenging workout, but in my opinion it doesn’t do much for your mind or soul. It does a heck of alot for your body though! But I look for more than just a good workout in my practice.

So far, every teacher at my new favorite studio is amazing and different in their own unique way. It would be difficult for me to choose a favorite instructor, as they are all lovely 🙂 Even the one guy, he’s lovely too. Haha.

I’ve challenged myself to go to a class as often as I can and also continue my practice at home. It’s already been rewarding to me, in so many ways. Not only do I attend a 90 minute, hot yoga power class every morning, but I walk to and from the studio. And I’ve noticed that walking to the studio, my mind is racing with so many things and it feels very heavy. But when I’m walking back after my practice, my mind is clear. Light. Peaceful. And that’s a wonderful feeling.

I’ve been setting the alarm every morning and leaving for my class as early as I can. Even when I don’t get much sleep the night before, I still push myself up and out the door. Mike sent me a wonderful text while I was in class this morning. It read:

“I’m proud of you for doing the yogas sweetie, even when you’re not feeling great and tired. For reals.”

That simple little text, brought tears to my eyes. It made me feel like I was on the right track, and the fact that I’ve made him proud means so much to me. I know I’ve made so many other people proud as well, and that means alot also. More importantly though, I’ve made myself proud of, well, myself.

My yoga teacher training course begins in just a few weeks, and I know it’s going to be hard. It’s going to be intense. It’s going to challenge me.

And I’m ready for it. Rawrr.

Enjoy Life

Before you say anything, I KNOW! I haven’t updated my bloggy blogs in forever. And I feel just awful about it 😦 I sowwie. Life has been busy though, but here I am. I am back. And ready to share with you an amazing new find that I, well, found!

These granolas they have are just the very tip of the gluten free & vegan iceberg! They have bars, cookies, lentil chips, fruit & seed mixes and the list goes on. Best part is that it’s a tasty treat that even I can eat! AND they are healthy for you. Win-Win 😉

Today, I’m focusing just on their granola. I’m really bad when it comes to eating breakfast & lunch. I hate it. I’m never hungry until like, 5pm, usually. But I know I have to eat at least something through the day, especially in the mornings. So I have a tiny cup of this granola with some coconut flavored almond milk and I’m ready to take on the day! Yep, I totally just used that phrase but I don’t care because I just had some granola and I’m feeling energetic enough that I’m ok with using that phrase 😉

The cinnamon one is probably my favorite, but they are all truly amazing. I eat the chocolate one just plain out of the bag, it’s like a little treat! Today I actually mixed a little cinnamon & a little berry together and that was yum city! (Look at all these lame phrases I’m using! And YOU would use them too if you ate this stuff.)

Really guys, try this brand. They are fantastic. They are gluten free, non-GMO and totally allergy friendly 🙂 Let me know what you think! And sorry again for the lack of posts the last little while! I still loves ya.
