Best Dang Auction Company Evah!

You may not know this about Mike and I… but we’re an auction family! Well, him and his family are. I came along for the ride the moment he and I started dating.

Wards Auctions has been around for many, many, MANY years. Mikes Dad (sarcastic, funny, smartass. Just like him!) is the fabulous auctioneer and the leader of the pack, and the whole dang fam jam helps out. Mikes Mom, Jayne, is the “Auction Goddess”, and his siblings and I are there as well helping out when we are needed.

Mike and I are ALWAYS in the office during auction days. I’m the auction princess and he’s the one who makes everything work and he makes our lives much easier with his “can fix any problem and answer any question” ways. He’s Wards wonder child. He knows it. We all knows it.

So, if you’re an auction buff, know someone who is or even a virgin auction-going newbie (welcome to the dark side!), you should check us out! DO IT.

Let’s Find A Cure! Rawrrr!

Most of you don’t know this, but my lovely boyfriend Mike was diagnosed several years ago with a Parkinsonism called Dopa Responsive Dystonia. It’s a movement disorder that involves involuntary muscle contractions, tremors, and other uncontrolled movements due to lack of dopamine in the brain. With proper medication, he can calm his symptoms and is more or less, a pretty normal guy. However, for the past year we have noticed a change in his symptoms which we, and doctor’s, fear to be Early Onset il_fullxfull.394122359_39v2Parkinsons Disease. 

He’s still the normal, sarcastic, talented guy I’ve always adored, but as this disease continues in him, symptoms will worsen with time and that’s why we need to find a cure for this, right meow!

I love this boy. He’s truly my everything, and I refuse to sit back and watch this diagnosis get the best of us. I won’t let that happen. He’s too smart, too talented and too young to be going through this and to think that who he is right now could slip away over time, breaks my heart into a million pieces. I can’t, I won’t, I SHANT let that happen! (Yep. I totes said shant. And totes.)

Missing You

This past weekend was a lovely one. Mike and I drove to Calgary to visit with my family and spend some time in Banff. We had such a lovely time.

I decided I needed some extra family time, so I’m staying in Calgary for the next few days or maybe longer, we shall see. Mike left last night and made it safely back to Edmonton. I remember when we used to have a long distance relationship when we first started going out, and the hardest part was always those last few minutes before one of us left the other to go home. It kinda felt like that all over again last night.

But, it’s been lovely seeing my family and Mike will be back soon to get me and take me back. It’s just hard being away from him, is all. I’m sure most of you know the feeling. This whole “missing you” emotion really is a hard one. I sure do love that boy 🙂

On another note, it’s absolutely gorgeous here in Calgary! I’ve already went for a long run, took my puppy Vienna out for a long walk and enjoyed my smoothie and Beauty Detox Foods book on the patio! And it’s not even 10am yet! I really forgot how much I loved this area of the city too, so calm and pretty. Right beside a huge natural park. My parents are lucky ducks to live here 🙂

I’ve attached some of the photos from our little day trip to Banff. It was Mikes first time there too! I’m happy I was able to be his lovely tour guide.

Gasp! I’m Terrible.

The title says it all, my lovelies. I. Am. Terrible! I haven’t posted on here in forever! Longer than forever even! Life got in the way a little bit, but I promise to continue to grace you with my charm & wit from now on!

I’m off to Calgary tomorrow to visit with family & spend some time in Banff as well, which I’m CRAZY excited for! 🙂

Oh! Naturals = Oh Yummy!

Recently, I needed a quick and easy snack from my local grocery store. Being vegan, it can sometimes be hard to find something fast & tasty from a grocery store that isn’t just fruit or veggies. Then I found Oh! Naturals flavored banana chips! And I was instantly hooked. So far, I’ve only tried the natural flavor and the chocolate flavor, but they also have a strawberry and soon to be a vanilla and melon flavors!

These banana chips are packed full of flavor, crunchy & best of all, totally vegan & gluten free! I highly recommend these yummy snacks 🙂

Me-Oh-My Vegan Coconut Fudge

Fudge. Need I say more?

Fudge is such an indulgent treat and just so happens to be one of my favorites. Granted, it’s not the most healthy treat in the world, but sometimes you just need to live a little 😉

I’ve been to Banff, Alberta many times. When you live in Alberta, you tend to go there for a weekend mountain getaway. It’s a beautiful, majestic little town full of fun and unique places. One of the best places to get fudge, just so happens to be in Banff at a little place called “The Fudgery”. It has all kinds of fudge. Every flavor you can think of. I’m a simple girl, with simple tastes. I always got the plain old chocolate. And me-oh-my, it was worth every bite.

Now being vegan, I sadly can’t have that fudge anymore. But, I have a killer recipe that is sure to please any of you fellow vegans and fudge enthusiasts.

Please note that this recipe can be adjusted! This is the coconut recipe. If you wanted, say, a more minty taste you just need to omit the coconut and add peppermint extract and crushed candy canes. So after you try this flavor, give some others a-go and post in the comments what fudge is your favorite and I can help you adjust accordingly 🙂

Me-Oh-My Vegan Coconut Fudge coconutfudge

  • 1 Cup Dairy-Free, Semi-Sweet Chocolate Chips
  • 3-1/2 Cups Confectioner’s Sugar
  • 1/2 Cup Dutch Process Cocoa Powder
  • 2 Tablespoons Dairy-Free Butter
  • 1/2 Cup Regular Canned Coconut Milk
  • 1/2 Teaspoon Vanilla Extract
  • 1 Cup Unsweetened Flaked Coconut, Toasted

Lightly grease an 8 x 8 inch square baking pan.

In a large bowl, combine the chocolate chips, sugar, and cocoa. Separately, place the margarine and coconut milk in a small saucepan, and stir together over medium heat. Cook the mixture until the margarine has melted. Remove it from the stove, and immediately pour over the chocolate mixture. Let everything sit for a couple of minutes, and then stir vigorously to melt the chocolate and add the dry ingredients. Continue stirring until a completely smooth mixture forms. Mix in the vanilla, and quickly pour everything into your prepared pan. Smooth out the top and sprinkle the flaked coconut evenly over the entire surface. Press the coconut gently into the fudge with the palm of your hand. Let cool completely before cutting into squares.

Makes 32 Small Squares
